Catherine de’ Medici, Queen of France between 1547 and 1559, wife of King Henry II was an avid fan of spinach and it seemed to have made her just as tough as Pop-eye. To her honour dishes now served with spinach are known as ‘Florentine’ reflecting her birth place Florence.
