The onion has no known single origin as there are many types eaten all over the world since pre-history. Onions contain a volatile gas, syn-propanethial-S-oxide. When an onion is cut it releases this gas, which stimulates nerves in the eye creating a stinging sensation.
To avoid the stinging and tears rinse onions under water first. Onions are one of few vegetables mentioned in the bible.
